I requested the recipe for this cake from my husband's mother because, after tasting it, we were all captivated by its taste and we wanted to have it at hand whenever we feel like it. In addition, I was all the more interested as I did not expect that a recipe that contains oil and not butter would result in such a tender cake. Initially I even expressed my ambiguity about what is called a cake instead of a tart, but then I tasted it and the perceived texture made me admit my mistake. :)
I recommend this recipe for the moments when the need for sweets is urgent, and the pantry is helpful, housing a jar of plum jam.

INGREDIENT (20x30):
2 eggs
100g old
lemon peel
vanilla essence
100ml sunflower oil
300g cake flour (sifted)
1 teaspoon baking powder
a pinch of salt

PREPARATION:
Eggs, sugar, orange peel and essence are mixed for no more than 1 minute to allow the sugar to melt.
