Put the flour in a bowl and in the middle of it, the crushed yeast, salt, sugar and the two eggs. Grate the lemon on a small grater, all over the surface of the bowl and start preparing the dough.

Mix the ingredients in the middle of the bowl until the yeast dissolves. Pour hot milk, little by little and incorporate the flour. Add the butter and knead the dough until the dough is even, which must be elastic and non-sticky.

Cover the dough with a clean towel and leave to heat, to rise, away from cold air currents.

Meanwhile, prepare the filling. Mix the sweet cottage cheese well with the egg, vanilla and sugar until the latter ingredient is completely dissolved. Depending on the density of the filling, add 1-2 tablespoons of white flour, so that the filling is well bound and not soft.

When the dough has doubled in volume, place it on the floured board and knead a little more, with enough flour, to give up the volume and become firmer, to be easier to process.

Divide the dough into 16 pieces from which some balls will be made.

Take the first ball and stretch out an oval, hand-shaped sheet with your fingers outstretched. With a knife, cut the dough to form the "fingers" of this hand from the dough and then take 1-2 teaspoons of filling and place on the side where the "wrist" would be. Roll the dough, from the sides, first so that the filling does not spread and then towards the ends of the "fingers", which will be positioned nicely around the formed roll (as in the attached pictures).

Place the Parisian in a tray lined with baking paper and continue forming the others until the dough is exhausted.

Mix an egg well and grease the Parisians with it, then sprinkle with sesame seeds.

Put the tray on medium heat in the preheated oven. When the Parisians have browned nicely, remove the tray from the oven and turn off the heat.

Parisians are good both warm and cold, simple, or with a glass of milk.

The popularity and versatility of pancakes is well known in both traditional Romanian and international cuisine. Depending on the filling, the pancakes are served both as an appetizer and as a dessert. The recipe we propose below can be honored along with other delicious appetizers to the liking of the whole family.

250 g flour,
5 g salt,
60 g sugar,
330 ml of milk,
2 beaten eggs,
a packet of vanilla,
30 g melted butter,
grated peel of a lemon

450 g fresh spinach or 225 g frozen spinach,
2 tablespoons butter or oil,
450 g sweet cheese,
1/4 cup sour cream,
3 eggs,
1/2 teaspoon salt,
ground nutmeg to taste,

1/2 cup grated Parmesan or cheese

To prepare the pancakes, sift the flour into a bowl, then add the beaten eggs and mix gently with the whisk. In another bowl, add salt, sugar and vanilla to the milk, stirring gently. In the flour bowl, gradually add the milk, stirring constantly, until the dough becomes creamy like cream. Then add the melted butter and about a third of the grated peel of a lemon. Put the dough in the fridge and let it rest for about an hour.

Put the pan of pancakes or Teflon on the fire (between medium and high). After the pan has warmed up well, before baking the first pancake, grease it with a little butter.

With the help of a polish, take it from the pancake dough (about 30-45 ml of dough for a pancake), and spread it evenly on the bottom of the pan. When the pancake starts to come off the edges of the pan, turn it on the other side and leave it for about a minute.

Repeat the operation until all the pancake dough is finished. 10 pancakes come out of the above composition.

If you use fresh spinach, wash it well in a few waters, then put it in a pan in which 2 tablespoons of butter or oil are heated. When the leaves become soft, remove from the heat and allow to cool. Frozen spinach is thawed and then strained with excess water.

Crush the cheese well with a fork, then mix with butter and cream, spinach and 1/2 teaspoon salt. Add the eggs and mix well. At the end, season with nutmeg.

Put 2 or 3 tablespoons of the cheese mixture in the middle of the pancake, fold the pancake at both ends of the filling and roll.

Place the folded pancakes in the baking dish with the rolled end down, grease them well with melted butter, then grate the dry cheese. Cover the baking dish with a lid or aluminum foil and bake in the preheated oven over medium heat (180 C).

After 15 minutes, remove the foil or lid so that the pancakes will brown. When browned, the pancakes turn golden. Remove from the oven and serve hot.
